The Best Cilantro Lime Coleslaw

I hope you all enjoyed the long weekend! I also hope that you found the time to remember that the long weekend wasn't just about vacations and barbecuing rather it was about remembering those who sacrificed so much so that we can enjoy the freedom to do so. I come from a family of veterans and at times, find it hard to put into words how grateful I am. So, thank you to all the service members, past and present!!


We spent the holiday with our family. It was so wonderful to be together laughing and loving our time together as this was the first time we have all been together since the global pandemic started a few months ago.


One of my go to potluck dishes to take anywhere is my Cilantro Lime Coleslaw. This dish is incredibly easy! What I love most.....it can be made ahead of time! In my opinion, I believe its best when it's made ahead of time. It gives the cabbage time to absorb the flavors without loosing any of the crispy crunch!

With just a few ingredients, this dish is so simple yet bursting with flavor! I used to make it with good ole sour cream, but I have recently started replacing all of my sour cream with this Chobani Squeezable Greek Yogurt. Have you guys tried this yet?

For starters, I love anything in a squeezable bottle. It just makes everything easier! I also love it because it's less fat and calories while providing extra protein. I am always trying to sneak stuff like this into the kids diet...as well as my own!


Call me crazy, but I also love raw red onion! So does my son, Austin. We put it on our sandwiches, salads, salsa, and Lox + Bagels. The red onion adds a bit of spice to this flavorful dish!

Cilantro Lime Coleslaw

Ingredients:

1 Head of Green Cabbage, thinly sliced & chopped

1/4 cup finely diced red onion

1 bunch of cilantro, finely chopped

1/2 cup of Mayonnaise

2/3 cup of Chobani Squeezable Greek Yogurt (I usually do a little extra because I like mine creamy)

1 & 1/2 Tablespoons of sugar

juice of 2 & 1/2 limes (Do a little less if you don't like lime)

Salt & freshly ground pepper to taste


Instructions:

Mix your thinly sliced and chopped green cabbage with the diced red onion & chopped cilantro. Add in the Mayonnaise, Chobani Squeezable Greek Yogurt, the sugar, lime juice, and salt & pepper. Mix well. Garnish with a sprig of cilantro. **If you are making this ahead of time (which I would recommend), be sure to give it a good stir a couple of times before serving so that all the cabbage is well coated.
