Dishin with D: Meatloaf

Don't let meatloaf gross you out. I know, say it with a southern accent and real slow. Meeeaaaatttttlllloooooaaaaaf. It just sounds gross.


If you've been watching Dishin with D {my pretend cooking show that has come out of quarantine}, then you have heard me talk about meatloaf. I swore I would never eat meatloaf again after heading off to college. You see, Greg Pappas (my dad), had three major dishes in his repertoire: Baked Chicken, Spaghetti, AND MEATLOAF. Woof. And not the good kind of meatloaf. The kind where you just stick a bunch of ground beef in a pan and slap some ketchup on it. Scarred for life people....


A few months back, I did the Arbonne 30 day detox. My goal was to loose a few pounds. Which I did. Then Covid happened....


Anyway, I digress. With the detox, I received several recipes that much to my surprise, Stephen and the kids love as well. Their number one favorite is the meatloaf. I followed this recipe precisely when I was doing the detox program, but now that I'm done, I have made a few tweaks that suit my family. Its delicious, I promise!

Meatloaf recipe:

1 pound of ground beef

1/4 cup of flour (I have also subbed this with Almond flour & Coconut flour)

3 TBLS Tomato Paste

1 Egg

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Salt


Topping

3 TBLS Tomato Paste

2 Roma Tomato's, chopped

1-2 TBLS Apple Cider Vinegar

Salt to taste


Directions:

Preheat oven to 400 degrees. For the meat: In a bowl combine: turkey, flour, 3 tablespoons tomato paste, egg, garlic powder, onion powder, & 1 teaspoon of salt. Mix until well combined. Spread the meat mixture evenly into a loaf pan. **I cover my pan in aluminum foil & then spray it with non-stick cooking spray for easier cleanup**.


For the topping: In a small bowl, combine the 3 tablespoons of tomato paste, chopped Roma tomatoes, apple cider vinegar, & salt to taste. Spread the mixture evenly over the top of the meatloaf.



Bake for 30-45 mins or until fully cooked through.


I love to serve my meatloaf with Sweet Potato Mash & a roasted vegetable.
